grilled squash... 20 minutes

the goods:

3 medium zucchini, sliced lengthwise
3 medium yellow squash, sliced lengthwise
1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon dried oregano

Heat grill to medium-high. In a large bowl, gently toss zucchini, squash, oil, vinegar, and oregano; season with salt and pepper. Working in batches of necessary, lift vegetables from marinade, and grill, covered, turning once, until tender, 3 to 5 minutes. Drizzle grilled vegetables with remaining marinade and serve. We threw some New York strip steaks on during the last batch and made a meal out of it! Enjoy!

I made this last month. It was hard to cut the squash and zuccini that way but it was good.
