skirt steak with crispy potatoes... 30 minutes



the goods:

2 garlic cloves
1/2 teaspoon dried thyme
1 tablespoon olive oil
1 pound red new potatoes, sliced 1/4-inch thick
1 pound skirt steak



Preheat oven to 475 degrees. Finely chop garlic, and sprinkle with salt. Using a chef's knife, press flat side of blade back and forth across garlic to make a paste. Transfer to a small bowl; add thyme and oil and stir to combine.



On a large, rimmed baking sheet, toss potatoes with garlic mixture; bake until browned, 20 to 25 minutes.



Meanwhile, heat a large skillet or grill pan over high. Season steaks with salt and pepper, and cook until medium-rare, 5 to 7 minutes per side, depending on thickness. Transfer to a plate to rest.



Throw a quick green salad together, slice the steak against the grain and serve with potato crisps!

After my Mom died I stopped doing a lot of things, one of those things was cooking. Jenni and Chris would love to come over and have me cook for them, I'm not really that fantastic I just was blessed with a Mom that was a pheneomenal cook and I picked up a few things from being around her...I wanted you to know that now that I am finally done with school, and it's been almost 3 years since her death... that I have decided to start cooking again... I bought a dutch oven last night... and my first real dinner is going to be Osso Buco... I'll take pictures and share it with you if it turns out ok. I can't wait to get back into the kitchen. It's a good sign. :)
