I also made some copycat Red Lobster cheddar bay buscuits I found on pinterest to go with this and it was the best combo ever!
1 tablespoon olive oil
4 chicken cutlets
1 package romaine lettuce
1/4 cup fresh lemon juice
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
2 anchovy fillets, coarsely chopped
1 small garlic clove
Heat oil in a large skillet over high heat. Season chicken with salt and pepper. Cook until opaque throughout, 1 to 2 minutes per side; remove from skillet and let cool.
Cut the romaine hearts into 1-inch ribbons; wash and dry.
Make the dressing: In a blender, combine the lemon juice, mayonnaise, Parmesan, anchovy fillets, and garlic, blend until smooth.
Slice the chicken crosswise into strips; toss with the croutons, lettuce, and dressing.
