6 roma tomatoes, diced
fresh cilantro, chopped, plus leaves torn for garnish
2 avocados, pitted, peeled, and diced
1 can (16 ounces) refried beans
2 tablespoons taco seasoning
1 cup sour cream
3/4 cup grated sharp cheddar cheese
3/4 cup grated Monterey Jack cheese
1 cup sliced black olives, drained
Toss tomatoes with chopped cilantro and the juice of half the lime. Season with salt.
Add the diced avocado to a separate bowl and gently mash with a fork. Stir in 1/2 cup of the tomatoes and juice of half a lime.
Combine refried beans and taco seasoning in another bowl and stir to combine.
On a platter, or dish, start layering!
Layer 1: beans
Layer 2: sour cream
Layer 3: cheeses
Layer 4: guacamole
Layer 5: olives
Layer 6: tomatoes
Layer 7: cilantro leaves
Serve with chips!
