sweet pork quesadillas... 4 hours and 15 minutes

 
the goods:
 
1 pork tenderloin, trimmed of fat and silver skin
1 and 1/3 cup brown sugar
3 tablespoons olive oil
1 teaspoon cinnamon
1 tablespoon mustard powder
2 tablespoons garlic powder
1/3 cup water
 
flour tortillas
shredded pepper jack cheese
butter

 
Mix all ingredients together in a small bowl. In your crock pot pour down olive oil all over the base of your slow cooker. Put your tenderloin in and pour ingredient mix over the tenderloin; cook on high for 4 hours. 
Shred pork and divide evenly among desired amount of tortillas, top with shredded cheese as desired; top with another tortilla. Heat a skillet to medium, melt 1/2 tablespoon butter in pan and cook one quesadilla at a time 3 to 4 minutes per side, or until golden brown and cheese is melted. Slice into triangles with a pizza cutter and serve!
